I love a good dessert (as evidenced by the many cake, pie, cookie & bar recipes I’ve posted). But, in the last few years, I have really focused on cutting back my sugar & refined carb consumption. So, while I still enjoy the occasional scrumptious piece of homemade pie, I am experimenting with alternatives. A client of mine recently introduced me to these fabulous 05-Min Lemon Chia Mug Cakes! They mix up & bake right in the mug, are gluten- & dairy-free AND are done (from start to finish) in roughly 05min! You just gotta love ’em!
Ingredients
- 1 t coconut oil
- 1/4 c almond flour
- 1 egg
- 1 T honey
- 1/4 t baking powder
- 2 t chia seeds
- 2 t lemon juice
Put coconut oil in a microwave-safe mug & microwave just until melted, about 20 sec. Add almond flour, egg, honey & baking powder. Stir to combine.
Add chia seeds & lemon juice & stir to combine.
Microwave on high for 90 sec. Let cool for 5 min…if you can wait that long! Enjoy!
