If you don’t have ground turkey in your regular protein rotation, you really gotta try it!! This recipe made me a believer in this awesome protein source. It’s delish!
Meatball Ingredients
- 16 oz ground turkey
- 1/2 c panko (or bread crumbs)
- 1/4 c green onion, chopped (I have used chopped white onion as well)
- 1 egg, beaten
- 1 t fresh ginger, grated or minced (or 1/4 t ground ginger)
- 1 garlic clove, minced
- 2 t sesame oil (I have also used olive oil)
Teriyaki Sauce Ingredients
- 1/4 c brown sugar (I don’t pack it…it’s plenty sweet enough)
- 2 T hoisin sauce
- 1 T soy sauce (I use low sodium)
- 1/2 T water or sesame oil
- 1/2 t fresh ginger, grated or minced (or 1/8 t ground ginger)
- 1 garlic clove, minced
- Line a rimmed baking sheet with parchment paper. Pre-heat oven to 400˚ deg.
- In a large bowl, combine turkey, panko, green onion, egg, ginger, garlic & oil. Use your hands & mix until combined.
- Use a spoon (or your hands) to scoop & your hands to form the meat into golf-ball sizes, about 16 total meatballs. Place the meatballs evenly spaced on the prepared baking sheet.
- Bake in the oven for 10-12 min. Remove from the oven, flip each meatball & return to the oven for another 5-10 min, or until the meatballs are crispy & lightly browned. Cut open a meatball to check for doneness (no pink).
- Simmer all sauce ingredients together in sauce pan for 3-5 min stirring frequently.
- Serve with rice & my fav broccoli side dish. Enjoy!
