Often the best dinners are the ones you make up. No recipes. No Pinterest. No measuring. Just a dump & go mash-up of good ingredients & a little creativity! Recently my college daughter sent me a pic of her latest dinner creation (see below). She & her roommate are both budding foodies & have been cooking up some delish dishes. So, in a fun swap of roles, I’ve been asking HER for dinner ideas! Give this legit Asian Beef Bowl a try tonight!
Ingredients
- beef, thinly sliced
- sesame oil
- soy sauce
- rice wine vinegar
- chili oil
- pinch of sugar
- salt & pepper
- cucumbers, thinly sliced
- avocado
- kimchi
- egg, soft-boiled (see foolproof recipe here)
- Sriracha
- cooked rice
Make Marinade:
Combine sesame oil, soy sauce, rice wine vinegar, chili oil, sugar, & salt & pepper in bowl. Place beef & cucumbers into two separate bowls. Pour marinade over both beef & cucumbers. Let sit.
Make Beef
Drain beef & stir fry until cooked through.
Make Bowls
Put rice into serving bowl. Top with cooked beef, marinated cucumbers, avocado, kimchi, soft boiled egg & Sriracha. Enjoy!
