This spring I planted a small garden – zucchini, cucumbers, a bunch of tomatoes, jalapeno, green pepper & a couple basil plants. All are doing quite well…but the basil…oh, the basil…! I have soooooo much that I’ve had to go looking for ways to use it other than pesto. Introducing Basil Mayo! This is a delish, creamy & versatile condiment that you can whip up in 02 sec! Enjoy!
Makes 1 cup
Ingredients
- 1 cup fresh basil
- 1 cup mayo
- 1/4 t salt
- 1 small garlic clove, minced
Put all ingredients in a small food processor or blender jar. Puree until smooth. If needed, add a bit of water to achieve desired consistency. Store in fridge. Put on everything!!
