Chicken thighs are one of my weeknight go-to’s. They are super versatile, cook up quickly & are deliciously moist & juicy. Here’s a simple recipe that is based on the awesome combination of lemon & capers. Serve Braised Chicken with Lemon & Capers by itself or over rice, noodles or mashed potatoes!
Ingredients
- 4 chicken thighs
- Salt & Pepper
- 1 T butter, unsalted
- 1 T olive oil
- 2 lg garlic cloves, peeled
- 3/4 c chicken stock
- 2 1″ strips of lemon zest
- 2 thyme sprigs
- 1/2 T capers
- 1 bay leaf
Preheat oven to 350 deg. Season chicken with salt & pepper. In large ovenproof skillet, melt butter in the oil. Add chicken & cook over high heat, turning once, until browned, 8-12 min. Transfer to a large plate & cover with foil.
Add garlic to skillet & cook over low heat until softened, about 5 min. Add chicken stock, lemon zest, thyme, capers & bay leaf & bring to a boil. Return chicken to pan. Transfer skillet to the oven & braise for about 30 min or until meat registers 170 deg.
Discard thyme, bay leaf & lemon zest & serve!
