Ahhhh, summer. I love ya. I love the longer days, the warmer weather & the frequent opportunities to go camping! When you’re in the mountains there’s nothing like a good breakfast (like this Camping Breakfast Scramble) to get the day rolling. In my opinion, “camp food” needs to be:
- Hot
- Easy
- Filling
This breakfast fits all 3 requirements…and it’s so tasty that you might even consider making it at home! So, fire up your Coleman (or stovetop) & enjoy!
Serves 2-3
Ingredients
- 4 chorizo sausage links, sliced
- 1 baker potato, diced
- 6 eggs
- Olive oil
- Salt & Pepper
Drain potatoes (see NOTES below) & add to pan (if needed, add more olive oil). Cook until potatoes are browned & softened.
Add chorizo back to pan. Crack eggs on top of chorizo-potato mixture. While eggs cook, mix them into the mixture to “scramble” them. Cook until eggs are done.
Add salt & pepper to taste. Enjoy!
NOTES:
- To making camp cooking easier, I prep all ingredients at home. That way I can just dump ’em in!
- To keep cut potatoes from turning brown before I’m ready to use them, put them into a tupperware container & add enough water to submerge them. They’ll stay fresh for several days.
