Often called the “fish for people who don’t like fish”, halibut is a super go-to for a nutrient-dense, mild-tasting protein source. Although it can be a bit pricey, I do love me a good halibut fillet…especially oven-baked in a foil packet with butter & rosemary! Delish!
Ingredients
- 1 lb halibut fillet
- Salt & Pepper
- 3-5 T butter
- 2-3 sprigs rosemary
Preheat oven to 400 deg.
Take two large pieces of aluminum foil & place halibut fillet in the middle of 1 piece. Liberally sprinkle with salt & pepper. Dot pieces of butter all over the fillet & lay rosemary sprigs on top.
Place 2nd piece of foil on top of fish. Fold all edges over each other several times to seal & make an enclosed packet. Place packet on baking sheet & bake for 15-20 min.
Carefully open packet to allow steam to escape & serve with juices poured over the top. Yum!
