Coach Michelle’s Healthy Potato Salad

It’s easy, healthful, delish & a definite crowd-pleaser! Aside from the potatoes, all ingredient amounts can be altered. Add enough of each to make it taste yummy to you!

Serves 6-8 as a side dish

Ingredients

– 2 lb potatoes, sliced into 1/2” cubes
– 1 Tblsp salt
– 3 stalks Celery, chopped
– 1/2 c Green Manzanilla Olives, chopped
– 2 Tblsp capers
– 1/3 c Parsley, chopped
– 1/3 c Green Onions, chopped

Dressing

– 2 tsp Dijon Mustard (optional)
– 2 Tbsp Fresh Dill, chopped or 2tsp dried
– 2-4 Tblsp Apple Cider Vinegar
– 1/3-1/2 c Olive Oil
– S & P to taste

1. In a large saucepan combine potatoes & salt. Cover with water by 1 inch. Bring to a boil over high heat, then reduce heat to medium-low & cook until potatoes are just able to be pierced by a paring knife. (If you cook them too long they’ll be mushy.) Transfer potatoes to a large mixing bowl. Add celery, olives, capers, parsley, green onions & mix.

2. Combine dressing ingredients. Pour over potatoes & mix well. If needed, adjust amounts of vinegar & olive oil to taste. Season to taste with salt & pepper to taste. Enjoy!
