As the temps get colder & the holiday food gets richer & heavier…I start looking for fresh, healthful hot meal alternatives. And nothing checks off all these boxes like this light & refreshing seafood soup. You say you’ve never had a seafood soup? Well…what about cioppino, clam chowder, pho? Unlike those other more complicated seafood soups, this version is so basic, so easy & so delish! It’ll take you literally about 30min to make – start to finish. And significantly less time to eat! Enjoy!
Serves 4
Ingredients
- 1 t olive oil
- 2 garlic cloves, minced
- 1 T fresh ginger, peeled & minced
- 1 t lemon zest, minced
- 1/4 t red pepper flakes
- 4 c chicken broth
- 1 T soy sauce
- 1 T lemon juice
- 3 carrots, thinly sliced
- 1/2 lb shrimp or scallops (or combo of both!)
- 4 green onions, chopped
- 2 T cilantro, chopped
Heat oil in large saucepan. Add garlic, ginger, lemon zest & hot pepper flakes. Cook gently until very fragrant.
Add broth, soy sauce & lemon juice & bring to boil. Add carrots & reduce heat to simmer gently for 15 min.
Add shellfish & green onions. Boil until seafood is barely cooked, just a few minutes.
Sprinkle with cilantro & serve.
