Isn’t it awesome when you find a meal that you love AND that works well in all situations? Well, that’s what I’ve found in this meal – my everyday breakfast. This interesting concoction goes down easily, fuels me up before my workouts, bumps up my veggie intake AND tastes great! Give a try & let me know what you think!
Ingredients
- 1/2 of a zucchini, chopped
- 1/2 c or more of white rice*
- Salt & Pepper
- 3 egg whites**
- 1 egg
- Hot Sauce (I like green Tabasco)
Heat up olive oil in pan. Sauté zucchini with salt & pepper. Mix eggs & rice together. Add to pan & cook until browned on one side. Flip over & cook other side until down. Top w/ hot sauce & enjoy!
Notes:
* I use white rice because I often eat this before working out…and I’m looking to minimize fiber. You could easily sub in brown rice or any other grain you prefer. Sometimes I even add sweet potato to this!
** Again, because I’m typically eating this close to a workout, I use majority egg whites in order to minimize fat. You could easily use whole eggs, more or less of them to you liking.
