Every time I make seafood for dinner I always think “I should cook this more often.” Fish (all kinds) is an amazing meal option – it thaws out quickly, cooks up incredibly fast, can be flavored in multiple ways & is a great source of protein. What’s not to love?! My main go-to’s have been steelhead trout, salmon & tilapia. But recently I decided to branch out into other white fish options…like cod. It’s hearty, meaty & a good choice for non-fishy folks. Give this Parmesan Baked Cod recipe a try & I promise you’ll want it in regular meal rotation!
Serves 4
Ingredients
- 2lb cod fillets
- 1/2 c mayonnaise
- 1/3 c parmesan cheese, finely grated
- 2 t parsley, chopped
- 2 t basil, chopped
- 2 cloves garlic, minced
- salt & pepper
Preheat oven to 450deg. Line baking sheet with parchment paper. Place fish fillets onto baking sheet & set aside.
In a small bowl, combine mayonnaise, cheese, fresh herbs, garlic, salt & pepper. Spread evenly over top of fish.
Bake 10-12 min or until fish registers 145 deg. Serve & enjoy!
