Pickled Onions & Jalapenos

Truth – I LOVE pickled things.  Well…real truth…I love pickled things…EXCEPT for pickles!  

That’s what makes this recipe so awesome.  It has all the stuff I love about pickled foods (crunchy, vinegary, tangy goodness), but it’s not pickles!  And frankly, these onions & jalapenos are just so darn good on everything.  My mouth is watering just looking at this picture!  😉

Ingredients

  • 1 small red onion, thinly sliced
  • 1 jalapeno, seeded, thinly sliced
  • 1 c vinegar*
  • 2 T lime juice
  • 1 T sugar
  • 1 t salt

* I have used white wine…but my favorite is apple cider vinegar.

Place onions & jalapeno into a heatproof container. Bring vinegar, lime juice, sugar & salt to a boil. Pour vinegar mixture over onion mixture. Mix well & cover. Let sit at room temp for at least 30 min to “pickle” onions & jalapenos.

Put on top of whatever you like! I put on burgers, eggs, salads, fish, chicken…the list goes on & on!
