Meatballs are the best! They are easy to make & fun to eat. AND you can create endless variations depending upon what flavor profile you’re looking for. (If you’d like another turkey meatball option, try my Teriyaki Turkey Meatballs.) Here’s a super simple recipe packed full of protein – both animal & plant. Serve as is or over rice. Enjoy!
Ingredients

1 T olive oil

1 c Parmesan, grated

1/3 c almond flour

1/4 c parsley, chopped (See NOTE)

1/2 t garlic powder

Salt & Pepper

1 lb ground turkey

1 egg, scrambled
Preheat the oven to 400°F. Line a baking sheet with parchment paper & drizzle with oil.
In a large bowl, combine Parmesan, flour, parsley, garlic powder, salt & pepper. Add turkey & egg & use your hands to combine.
Use a spoon to scoop about 1/4c mixture. Form into meatballs with your hands, roughly 16 total meatballs. Place the meatballs evenly spaced on the prepared baking sheet.
Bake in the center of the oven for 15 min. Flip each meatball over & bake for another 15 min., or until meatballs are crispy & lightly browned (there should be no pink left in middle.) Enjoy!
NOTE:
- If you don’t have parsley…no problem! I often use other herbs like basil, cilantro & even a bit of mint!
