There’s nothing like a fresh, soft, warm homemade bun. But with the time needed for yeast dough to rise…and rise again…who has that kind of time?! That’s why I’m so glad I found this quick recipe. In truth it takes me about 1 hour to make…but still plenty fast for tonight’s hamburgers…or garbanzo burgers! Enjoy!

In the bowl of a stand mixer fitted with a dough hook, dissolve yeast in warm water, about 05 min. Add oil & sugar; let stand for 05 min. Add the egg, salt & flour. Mix until all flour is moistened. Let rest 10 min. Then mix on low speed for 10min adding additional flour as necessary until dough is soft (I often add another 1/4 to 1/3 c of flour). Note that dough will be somewhat sticky after 10 min of kneading.

Preheat oven to 425 deg. Turn dough onto a floured surface & divide into 12 pieces. Shape each piece into a ball. Place 3″ apart on greased baking sheets.

Cover & let rest for 10 min. Bake until golden brown, 8-12 min. Remove from pans to wire racks to cool. Enjoy!
