I love when I come across an easy, healthful & oh-so-tasty main dish!!\u00a0 A friend of mine posted this on Facebook the other day…and oh yea…it’s pretty fabulous.\u00a0 Whip this up for dinner tonight & delight in all its lemony, olive-y goodness.\u00a0 Yum-O!<\/p>\r\n
Heat a large skillet on med-high heat.\u00a0 Add lemon slices & cook until caramelized, turning once, about 1-1\/2 min per side.\u00a0 Remove & set aside.<\/p>\r\n
Sprinkle chicken with salt & pepper.\u00a0 In same pan on med-high, heat 2 t olive oil.\u00a0 Add chicken & cook for 3-5 min per side, until chicken is golden.\u00a0 Transfer to a plate & set aside.<\/p>\r\n
To pan, add remaining 2 t of oil & heat.\u00a0 Add onion & cook, stirring until soft & starting to brown, about 5 min.\u00a0 Add celery & carrots & cook for 5 min.\u00a0 Add ginger, garlic & spices & stir until toasted & fragrant, about 1 min.\u00a0<\/p>\r\n
Add broth & chicken & any accumulated juices.\u00a0 Reduce heat to med-low & simmer, covered, until chicken is cooked through, about 15 min.<\/p>\r\n
Off heat, stir in olives & lemon juice.\u00a0 Top with caramelized lemons slices & parsley.\u00a0 Serve as is or over rice.<\/p>","protected":false},"excerpt":{"rendered":"
