Easter Chili Egg Puff

Try this delish egg recipe for your Easter breakfast or brunch.  It’s a staple at my house…and not just for Easter!  🐣🌷

Makes 10-12 servings

Ingredients

  • 10 eggs
  • 1/2 c flour, shifted
  • 1 t baking powder
  • 1/2 t salt
  • 1 pint (16 oz) small curd cottage cheese
  • 1 lb jack cheese, shredded
  • 1/2 c butter, melted
  • 2 cans (4 oz each) diced green chilies

Directions

1. With an electric mixer, beat eggs until light & lemon-colored. Add flour, baking powder, salt, cottage cheese, jack cheese & melted butter. Blend until smooth. Stir in chilies.

2. Pour into a buttered 9×13 baking dish.

3. Bake at 350 degrees for 35 min, or until top is browned & center appears firm.

4. Serve hot & enjoy!

NOTE: I generally make 1/2 a recipe…because this is huge! Also, I usually cut the cheese amount down by a 1/4 to 1/3.
