Garlic & White Bean Spread

So you’ve made a commitment to eat more veggies.  Good on you!!  Here’s a delish recipe that will keep you reaching for those carrots…just so you can eat more of this spread.  Enjoy!

  • 2 c cooked white beans (canned work great – just be sure to rinse)
  • 3 cloves garlic, peeled & minced
  • 1 T minced fresh rosemary
  • 1/2 t dried red pepper flakes
  • 2 T butter
  • 1 t salt
  • 1/2 t freshly ground pepper
  • 1 c chicken broth (low-sodium works great)
  • Juice of 1/2 lemon

Drain & puree the beans. Melt the butter in a sauté pan & add garlic, rosemary & red pepper. Sauté until the garlic is soft.

Add the bean puree, salt & pepper & mix well.

Add the chicken broth & mix well.

Cook over medium-low heat until the mixture is a good spreading consistency, about 10 min. Remove from heat & stir in lemon juice. Serve w/ veggies and/or crackers. Enjoy!
