Green Olive Lemon Gremolata

I know…I know…I’m on a green chopped-up herby kick (see Pistachio Mint Pesto recipe from a few weeks ago)!  It’s what I do when Spring comes around.  All those greenies are so fresh & fragrant…and the lemons are tart…and put together it all tastes like Spring smells.  New.  Bright.  Floral.  Try this lovely gremolata on everything – eggs, meats of all kinds, pasta!

Ingredients

  • 1 bunch parsley leaves
  • 1 clove garlic
  • 1 lemon, zested & juiced
  • 1/4 c green olives
  • salt & pepper
  • olive oil
Roughly chop parsley, garlic, lemon zest & green olives by hand or in food processor – it’s ok if there are bigger pieces.  Add salt, pepper & olive oil to taste.  Serve at room temp!
