Nothing beats a great molasses cookie…nothing…except maybe gingerbread. Which is interesting because molasses cookies began as a small cake form of gingerbread. Knowing that connection fully explains why I love them so much. They’re molasses-y sweet, spicy & chewy. I always look forward to making…and eating…these every year!
Ingredients
- 3/4 c melted butter
- 1/4 c molasses
- 1 egg
- 1 c sugar (plus extra for dipping the cookies)
- 2 t baking soda
- 2 c flour
- 1/2 t cloves
- 1/2 t ginger
- 1 t cinnamon
- 1/2 t salt
Preheat oven to 375 deg. Combine the butter, sugar, molasses & egg, mix thoroughly.
Stir dry ingredients together. Add them to liquid mixture & beat well. Chill the dough at least 4 hrs.
Shape dough into 1″ balls, then dip in sugar. Place on a greased cookie sheet & flatten with a fork.
Bake 8-10 min until flat & dark brown. The cookies should be slightly crunchy on the outside & chewy on the inside.
