With Springtime comes warmer weather & delicious new veg to eat. As a seasonal eater I must say that, by the end of winter, I get mighty tired of butternut squash, beets & broccoli! Sauteed Green Beans, Fennel & Garlic is an easy, flavorful dish which doubles as a great opportunity to add an underused vegetable (like fennel) to your dinner plate. Bring on the produce!!
Serves 2
Ingredients
- Small fennel bulb (fronds & core removed), thinly sliced
- 1 lb green beans, end trimmed
- 2 T olive oil
- 2 cloves garlic, minced
- Salt & Pepper
Fill a medium pot with water & add 1 t salt. Bring to a rolling boil & add green beans. Boil for 3 min or until bright green in color. Drain & run under cold water for 30 sec. Set aside.
Heat olive oil in a large sauté pan over high heat. Add fennel & sauté for 3 min. Add green beans & garlic cook for another 3 min.
Add salt & pepper to taste. Serve immediately. Enjoy!
