I do love shrimp…but sometimes I end up in a rut with preparation. So, I went looking for a new, unique way to prepare the tasty crustaceans. This recipe reminded me of my trip to Spain, was quick to prepare & used one of my fav ingredients – saffron. If you’re not familiar with saffron, I encourage you to try it. My tip: Just start with a small amount as it has a strong flavor!
Ingredients
- 2 T olive oil
- 4 cloves garlic, thinly sliced
- 1 shallot, minced (I used white onion)
- 1 lb shrimp, patted dry
- 1/4 c white wine
- 1/4 t saffron threads (See NOTE)
- 1/2 t lemon juice
- 2 T parsley, chopped
- Salt & Pepper
Heat white wine in a bowl (I microwaved it to just under boiling). Rub saffron between your fingers to break it up into small pieces & put pieces into the hot wine. Let it infuse while you prepare other ingredients. Season shrimp with salt & pepper.
Heat a large pan over medium heat & add olive oil. Let oil heat up, approx 2 min, add garlic. Toss continuously for 2 min to avoid burning garlic. Add shallot & shrimp. Cook for 1 min, then flip shrimp over. Add saffron-infused wine, lemon juice & parsley. Stir everything together & heat until wine begins to boil. If desired, top with more freshly parsley. Serve as is, with crusty bread or over pasta or rice. Enjoy!
NOTE:
- This is a significant amount of saffron. If you’re unfamiliar with the flavor, cut the amount to 1/8 t as it is quite strong. If you really like saffron, the original recipe called for 1/2 t…feel free to use the full amount!
