Although I love to try out new recipes, I find that every so often I crave an old stand-by. There’s something about making a dish that you’ve made a thousand times before…that you know exactly how it’ll taste…that you don’t have to think about much. And, as an additional added bonus, these sorts of dishes often lend themselves quite nicely to small adjustments based on what you have in the fridge. So, my dear friends, I give you Spicy Shrimp Pasta! Enjoy!
Ingredients
- pasta (your choice!)
- shrimp, peeled & deveined
- olive oil
- chicken broth
- garlic, sliced thin
- salt & pepper
- red pepper flakes
- pine nuts
- parsley, chopped
- parmesan, grated
- Optional ingredients: diced onions, sliced mushrooms, broccoli, peas
Cook pasta to al dente.
In lg skillet, combine chicken broth & olive oil (use about 4x as much chicken broth as olive oil). Add garlic (and any other veggies you like) & red pepper flakes. Bring to gentle boil & boil until reduced by about 1/3 to 1/2’ish.
Add shrimp & cook through.
Remove from heat. Add pine nuts & parsley. Put over pasta & top with parmesan. Serve immediately.
