I don’t know about you…but I find veggie side dishes difficult. I want them to be really flavorful, but simple (because I’ve already spent enough time on the main dish). This broccoli recipe fits the bill perfectly! Yum-O!
Ingredients
- 1-1/2 lb broccoli
- 1/2 t Salt
- Ground Pepper, to taste
- 3 T olive oil
- 1 T lemon juice
- 3/4 t dried oregano
Trim broccoli florets from stalk. Cut florets into 1-inch pieces. Trim & discard lower 1-inch of stalk. Using vegetable peeler, peel away outer 1/8-inch of stalk.* Cut stalk into 1/2-inch chunks.
Place broccoli in bowl & toss with 1/2 t salt. Microwave, covered, until broccoli is bright green & just tender, 6-8 minutes.
Whisk oil, lemon juice, oregano & ground pepper together in bowl.
When broccoli is done, add dressing & toss to combine. Serve.
Notes
*I never peel the stalks…but I suppose they would be more tender if I did!
Could also add minced garlic or minced anchovies to dressing…both would be tasty, but much stronger. Red pepper flakes would be good too & add a bit of kick to this dish!
