Avocados – one of nature’s best fruits! At peak ripeness these beautifully green gems (at least on the inside!) are smooth, creamy, rich & oh so darn delish! We all know that avocados go great on tacos or turkey sandwiches. But their neutral flavor & dense creaminess makes them a super-stealthy healthy addition to desserts. Yep, desserts! If you’re new to avocados after dinner, this Dark Chocolate-Avocado Pudding recipe is a must-try! Enjoy!
Makes 8 servings
Ingredients
- 1 c water
- 1/4 c sugar
- 1/4 c unsweetened cocoa powder
- 1 T vanilla extract
- 1 t instant espresso powder
- 1/4 t salt
- 2 lg ripe avocadoes (roughly 8 oz each), halved & pitted
- 3-1/2 oz 70% dark chocolate, chopped
Combine water, sugar, cocoa, vanilla, espresso powder & salt in small saucepan. Bring to simmer over med heat & cook, stirring occasionally, until sugar & cocoa dissolve, about 02 min. Remove from heat & cover to keep warm.
Scoop flesh of avocadoes into food processor bowl & process until smooth, about 02 min. With processor running, slowly add warm cocoa mixture in steady stream until completely incorporated & mixture is smooth & glossy, about 02 min.
Microwave chocolate in bowl at 50% power, stirring occasionally, until melted, 2-4 min. Add to avocado mixture & process until well incorporated, about 01 min. Transfer pudding to bowl, cover & refrigerate until chilled & set, at least 02 hrs or up to 24 hrs. Serve & enjoy!
