Crispy Rice Peanut Butter Bars

As summer kicks into full swing with higher temps, I look for food options that don’t require turning on the oven.  Here’s a yummy treat idea that will keep your kitchen cool & your belly happy!  Besides, what could be better than the perfect combo between peanut butter cups & Rice Krispies Treats?!  An added bonus – they’re great for those gluten-free vegans in your life!

Ingredients

  • 2 c crispy rice cereal
  • 1/2 c roasted almonds or peanuts, chopped
  • 1/3 c seeds (chia, flax, hemp, and/or sesame)
  • 3/4 c unsalted creamy peanut butter
  • 3 T coconut oil, melted
  • 3 T honey or maple syrup
  • 1 t vanilla extract
  • 1/4 t salt
  • 4 oz dark chocolate (at least 70%)
  • 1/2 t flaky sea salt (optional)
In a large bowl, combine cereal, almonds & seeds.  In a medium bowl, stir together peanut butter, melted coconut oil, honey or maple syrup, vanilla & salt.  Pout over cereal mixture & stir to combine. Spread cereal-peanut butter mixture into 8″ square baking dish.  Spread out & press down evenly & firmly into pan. In a small saucepan, melt chocolate over lowest heat, stirring occasionally, until fully melted.  Pour over bars & spread evenly over top with a rubber spatula.  Sprinkle with flaky sea salt, if using. Chill bars in fridge for at least 1 hr, or until chocolate solidifies. Cut, serve & enjoy!
