OK…I admit…I detest pickles!! So you can imagine my hesitation when I saw this recipe. My mind went immediately to “Why ruin a perfectly good coleslaw with pickle juice?!!” But then I remembered Dr. Seuss & “Green Eggs & Ham“. I made it, I tried it…and whatya know…I liked it! This Dill Pickle Coleslaw makes a delish side dish or addition to pulled pork sandwiches. Enjoy!
Serves 8
Ingredients
- 16 c cabbage (red or green or combo), sliced very thinly
- 1 T kosher salt
- 1/4 c mayonnaise
- 3 T dill pickle brine (from a jar of pickles)
- 1 T apple cider vinegar
- 2 t sugar
- Pepper
- 1/2 c carrots, coarsely grated
- 1 t dill seed (I didn’t have seed so I subbed in dried dill)
- 1/2 t celery seed
Put cabbage in a colander & toss with salt. Set a plate on top of cabbage & weigh it down with a heavy can or jar. Let cabbage drain for 2 hrs.
In a small bowl, whisk mayo, pickle brine, vinegar, sugar & pepper to taste.
Transfer cabbage to a large bowl. Add carrot, dill seed, celery seed & the dressing. Toss until well combined. Season to taste with additional salt & pepper if needed.
