Are you enjoying all the memes out right now about loving tacos??!! If you haven’t seen any…well, click here!! Anyhoo, tacos are so delicious, so easy & so versatile. What’s not to love?! As for fish tacos…if they’re on a restaurant menu…I will get them. But making them is great too! Enjoy!
Ingredients
- 12 corn tortillas
- 3/4 lb tilapia or other white fish (cod, pollock, halibut)
- 1/4 t ground cumin
- 1/4 t cayenne pepper
- Salt & Pepper
- 1/2 T olive oil
For Sauce
- 1/4 c sour cream
- 1/6 c mayonnaise
- 1/2 T lime juice
- 1/2 t garlic powder
- 1/2 t Sriracha sauce, or to taste
Toppings (all optional)
- tomatoes, chopped
- radishes, thinly sliced
- red cabbage, finely chopped or shredded
- pickled onions & jalapenos
- avocado, diced
- cilantro, chopped
- cotija cheese
- fresh limes
Preheat oven to 375. Line large baking sheet with parchment or silicone liner. In a small dish, combine seasonings: cumin, cayenne pepper, salt & pepper. Lightly drizzle fish with olive oil & evenly sprinkle seasoning mix over both sides of tilapia. Bake for 20-25 min.
Combine all sauce ingredients in a medium bowl & whisk until well blended.
Quickly toast the corn tortillas on a large dry skillet or griddle over medium to high heat.
Pile fish & all topping ingredients onto a tortilla. Drizzle sauce over the top & enjoy!
