Street Tacos

If you’re looking for a fun weeknight dinner, I highly recommend street tacos.  These cute little morsels are tasty, easy to assemble, high customizable & downright fun!  Pair with a Big Salad & viola, dinner is on!

Ingredients

  • protein – whatever you have on hand (See NOTES)
  • small flour or corn tortillas

Toppings (all optional)

  • tomatoes, chopped
  • radishes, thinly sliced
  • cabbage, finely chopped or shredded
  • pickled onions & jalapenos
  • avocado, diced
  • cilantro, chopped
  • cotija cheese
  • fresh limes

Warm tortillas in hot skillet or in microwave. Fill tortillas with protein & toppings. Enjoy!

NOTES:

I used pulled pork made in a slow-cooker with pork shoulder (or butt). You can use any kind of protein…

  • skirt or flank steak, cut into small pieces
  • shrimp
  • ground beef
  • shredded chicken
  • refried beans
  • black beans mixed with corn
  • mushrooms & walnuts mixed together in food processor
  • tofu
