Foil-Wrapped Salmon with Lemons, Oranges & Onions

Salmon is a great protein source – quick to cook, lots of good fat, tastes great with all sorts of add-ons.  Every time I make it I tell myself that I need to cook it more regularly!  Here’s a super easy, super fast, very delicious recipe.  Great for the grill or the oven!

Ingredients

  • Salmon fillet or steaks
  • Mayonnaise
  • Lemon
  • Orange
  • Onion
  • Salt & Pepper
Preheat oven to 325 deg or grill. Place salmon on sheet of foil (if using fillets, skin-side down).  Sprinkle with salt & pepper.  Then spread the fish with a thin layer of mayonnaise. Thinly slice lemon & orange & cover fish with alternating slices.  Thinly slice onion & scatter on top of lemons & oranges.
Fold the sides of the aluminum foil up & over the top of the salmon until it is completely enclosed.  If your piece of foil is not large enough, place a second piece on top & fold the edges under so that it forms a sealed packet.  Leave a little room inside the foil for air to circulate.
Bake or grill for 15-30min (depending upon the size of your salmon).  Check for doneness by taking a sharp knife & inserting into the thickest part of your salmon.  If it is beginning to flake, but still has a little translucency in the middle, it is done.  Or, if you’d rather take an internal temp, it should reach 145 deg.
