Homemade Salad Dressing…and a BIG Salad

Recently I made a commitment to eat more veggies.  I mean…really…what dietary rec’s out there tell you to eat LESS veggies??  None!!!  🙂  One solution set I decided on was to add a BIG salad at dinner.  And, in order to make it even tastier, I began topping it with homemade salad dressing (store-bought dressings are often loaded with sugar).  Now, 1-1/2 yrs later, I find that I really crave my big salad!  It’s the perfect way to complete dinner AND get more veggies!

Makes enough for 2 salads.

Ingredients

  • 2 T Olive Oil
  • 1 T White wine vinegar (see NOTES)
  • 1 t Dijon mustard
  • Garlic powder, to taste
  • Pepper, to taste
  • Salt, to taste

Mix all ingredients together. Drizzle over salad & enjoy!

NOTES:

  • To scale up, increase amounts of all ingredients maintaining a 3:1 oil to acid ratio.
  • While I use vinegar, any acid will work – lemon juice, lime juice or other kinds of vinegars (apple cider, rice, sherry).
  • Fresh garlic can also be used…however the taste will be much stronger.
  • Feel free to add any herbs (fresh or dried) you like – tarragon, parsley, cilantro, oregano, basil, etc.
