Serves 6-8

Ingredients

  • 2-1/2 lbs boneless pork butt roast, trimmed & cut into 1″ pieces
  • salt & pepper
  • 1 T olive oil
  • 1 onion, chopped
  • 5 garlic cloves, minced
  • 1-1/2 T chili powder
  • 1 t oregano
  • 2 15-oz cans white or yellow hominy, drained
  • 3 c chicken broth
  • 1 14.5-oz can diced tomatoes
  • Cilantro sprigs, sliced radishes, sour cream for topping

Season pork with salt & pepper.  Heat oil in 12″ skillet over med-high heat until just smoking.  Add half of pork & cook until browned on all sides, 6-8 min.  Transfer all pork (browned & raw) to slow cooker.

Add onion & 1/2 t salt to now-empty skillet & cook over med heat until softened & browned, about 05 min. Stir in garlic, chili powder & oregano & cook until fragrant, about 01 min.  Transfer onion mixture to slow cooker.  Stir in hominy, broth & tomatoes & their juices.  Cover & cook until pork is tender, 6-7 hrs on high or 7-8 hrs on low.

Skim fat from surface.  Season with salt & pepper.  Top with sour cream, cilantro & sliced radishes.  Enjoy!
