Oh, it’s definitely feeling Fall’ish out there! The leaves are all shades of yellow, orange & red & there’s a crispness in the air that signals it’s time to pull out pants & long sleeves. It’s time to get cozy!!! And that definitely includes food changes that lean towards more soups & stews, hearty main dishes & pumpkin everything!! If you haven’t dusted off your slow cooker in a while, this Slow Cooker Pork Posole is a great recipe to start with. Prep it in the morning & return to a house that smells fantastic & a meal that the whole family will love!
Serves 6-8
Ingredients
- 2-1/2 lbs boneless pork butt roast, trimmed & cut into 1″ pieces
- salt & pepper
- 1 T olive oil
- 1 onion, chopped
- 5 garlic cloves, minced
- 1-1/2 T chili powder
- 1 t oregano
- 2 15-oz cans white or yellow hominy, drained
- 3 c chicken broth
- 1 14.5-oz can diced tomatoes
- Cilantro sprigs, sliced radishes, sour cream for topping
Season pork with salt & pepper. Heat oil in 12″ skillet over med-high heat until just smoking. Add half of pork & cook until browned on all sides, 6-8 min. Transfer all pork (browned & raw) to slow cooker.
Add onion & 1/2 t salt to now-empty skillet & cook over med heat until softened & browned, about 05 min. Stir in garlic, chili powder & oregano & cook until fragrant, about 01 min. Transfer onion mixture to slow cooker. Stir in hominy, broth & tomatoes & their juices. Cover & cook until pork is tender, 6-7 hrs on high or 7-8 hrs on low.
Skim fat from surface. Season with salt & pepper. Top with sour cream, cilantro & sliced radishes. Enjoy!
